The fat side is more rounded (assuming properly trimmed) so beading moisture drains off easily. Otherwise you can get ponding which can create soggy spots.
To be clear, itâs not a deal breaker either way. This is one of those âart as much as scienceâ things.
FWIW, Iâm looking right at Aaron Franklinâs (pitmaster of legendary Texas BBQ joint Franklin BBQ) book and it says fat side up.
Next time Iâll go that route and see the difference
