The TB replacement process has broken my brain, because I read an article like this with my mind in pure coaching carousel mode: https://www.nytimes.com/2025/04/21/world/europe/next-pope-francis-candidates.html

Like if you subbed in “power conference coach” for “cardinal” doesn’t this kinda sound like how reporters describe a guy who has grinded out seasons at difficult jobs?

Although he became a cardinal only in 2023, his experience in one of the world’s most heated conflict zones helped him rise to prominence.

And this is the long-time assistant who has been waiting in the wings for a while for his big job:

Cardinal Tagle was widely considered one of the most promising candidates in the 2013 conclave but seemed too young for the job at the time.

This is the guy who’s good at donor relations, but maybe can’t coach?

Vatican watchers say [Sant’Egidio, a Catholic community known for its service to the poor and conflict resolution] became an increasingly important lobby under Francis, and experts suspect that the cardinal’s closeness to the powerful community could help him obtain votes. But that link has also raised concerns that, if elected pope, he would be overly influenced by the group.

Who spent midnight to 12:45AM last night fighting online bots and website outages to secure a Switch 2 pre-order for their kids last night? Just me? Cool. :joy:

Through the whole experience… I couldn’t help feeling like I know how coaches in the transfer portal feel.

The Switch 2 got released? Well, I’m not going to fight to pre-order it, but once it gets easy to buy, the kids in this house will get something to play with.

Release date is 6/5… pre-orders started at midnight last night.

One step closer to being an honorary Texan!

Don’t get impatient during “the stall” and wrap in waxy butcher paper for the back half. Then give it ample time to rest before you start slicing.

The real question… fat side up or down? I went down but everyone I’ve talked to said they do up.

Fat side up.

Up let that fat drip back in for flavor

I went with the Traeger advice and did down :grimacing:

This matches what’s on their website

The fat side is more rounded (assuming properly trimmed) so beading moisture drains off easily. Otherwise you can get ponding which can create soggy spots.

To be clear, it’s not a deal breaker either way. This is one of those “art as much as science” things.

FWIW, I’m looking right at Aaron Franklin’s (pitmaster of legendary Texas BBQ joint Franklin BBQ) book and it says fat side up.

Next time I’ll go that route and see the difference

That’s the fun! Try different things and at the end of the day you get tasty BBQ either way!
